The Ultimate Grilled Cheese Sandwich

I’ve made no secret about the fact that I hate to cook and bake.  In fact, I’d much rather scrub the floors than cook a meal.  True story.   But, my family insists on eating, so I have to do it anyway.

Because of my feelings on the kitchen, I have several go-to recipes that are made just for people like me.  I call them “Recipes for People Who Hate to Cook.”  Quick, easy meals that your family will like – and you won’t have to spend an hour chopping up vegetables and looking for all of the parts to your food processor.  I don’t even own a food processor (or a mixer), y’all.

The first one is a more grown-up version of a grilled cheese sandwich.  My 7 year-old son starting calling it “The Ultimate Grilled Cheese,” so I’m calling it that here, too.

Ingredients
Sourdough bread
Three types of cheese – I use Swiss, Colby Jack and Havarti
Hidden Valley Ranch ‘Country Herb’ Sandwich Spread – find it by the salad dressings
Butter
Pickle and/or tomato slices

1. Spread butter on one side of two slices of sourdough.
2. On the other side of the bread, spread a generous amount of the sandwich spread.
3. In a buttered/oiled and warmed pan, lay a slice of bread with the butter side down. On top of it, layer a slice of each type of cheese. Then, add the pickles and/or tomatoes (I like it with tomato, but no one else in my family will eat tomatoes). Then, put the other slice of bread on top, with the buttered side facing up.
4. Grill the sandwich on Low for a few minutes on each side – until the bread is browned and the cheese is melted.

This sandwich is really no harder to make than a typical grilled cheese, but the sandwich spread, different types of cheeses and vegetables give it a little kick.  If I make this for lunch, we’ll do some fruit and potato chips.  At dinner, it’s great with soup.

    Throw a slice of ham on there occasionally. Rename it and you can make it twice as often. I love a hot ham and cheese.

      YES! I love hot ham and cheese, too. Even turkey is tasty!

    I’ll definitely have to give this a try, but alas, I’ll be the only one eating it. Neither my husband or two sons will eat sandwiches. Picky little brats! 🙂

    Hey…I have an idea. Why don’t you come finish all my reno projects I’ve started, and I’ll cook up some meals for you and your family. I’ve been told I’m an excellent cook! Just give it some thought. Ha!
